Choose between Laws Four Grain Bourbon or San Luis Valley Rye as the base of our house Old Fashioned. Featuring a house-made demerara syrup, this cocktail can also be served smoked for an elevated experience.
Whiskey Sour
A perfectly balanced blend of Four Grain Bourbon, lemon, Peychaud’s bitters, and vanilla simple syrup, this whiskey sour is smooth, tart, and utterly delicious.
Black Manhattan
Our take on the Manhattan features San Luis Valley Rye, maraschino liqueur, Poirier Amaro, and a Red Camper cherry. Poirier Amaro is a special project created by our Head Distiller Sam Poirier, bringing an herbal, slightly floral complexity to this classic cocktail.

Kunz Plum Brandy – A Passion Project
James Kunz, Laws Head Blender, took inspiration from traditional European brandies to create Kunz Plum Brandy, a fruit-forward spirit perfect for sipping before or after a meal. Aged for three years in used Laws Whiskey barrels, this brandy is smooth, slightly sweet, and infused with deep stone fruit and oak notes.
Poirier Amaro – A Labor of Love
Sam Poirier, our Head Distiller, took inspiration from traditional Italian liqueurs to create Poirier Amaro, an herbal digestif perfect for sipping before or after a meal. Aged for three years in used Laws Whiskey barrels, this amaro is smooth, slightly sweet, and infused with floral and botanical notes.
Agave Blanco – An Agave Spirit from Laws
Many years ago, our team experimented with 100% Weber Blue Agave, crafting a spirit that would thrive in Denver’s hot summers. The result? Laws Agave Blanco, aged in stainless steel, and a second version aged in Laws Bourbon barrels with French oak and mesquite wood. This unique offering is featured in our classic Margarita, making it a must-try for tequila lovers.
Marianne’s Promise – A Rum with a Story
Our founder, Al Laws, made a promise to his wife, Marianne, that if they started a whiskey distillery, he would also create her favorite spirit—rum. That promise has now come to life with Marianne’s Promise, a beautifully crafted rum now available at the Laws Whiskey Sanctuary. It’s also the star of our Jungle Bird cocktail, a tropical delight balancing rum, Campari, pineapple, and lime.
