    Four Grain Straight Bourbon whiskey

    Our Four Grain Bourbon story starts at two Colorado family farms where the highest quality corn and heirloom varietals of wheat, barley and rye are grown. Turning the page, our labor-intensive cooking technique brings each grain’s individual character to life while open-air sour mash adds soulful complexity. After three years in 53-gallon charred oak barrels, influenced by our high-elevation climate, an entirely novel bourbon unfolds.

    AROMAS:

    Orange blossoms compliment notes of black tea, honey and dusty pepper

    FLAVORS:

    Pekoe tea, orange peel, cinnamon and vanilla custard. Hints of sweet tobacco and spice lead to a rich, dry finish.

    MASH BILL:

    60% corn, 20% heirloom wheat, 10% heirloom rye, 10% heirloom malted barley

    AGED:

    3+ years in new 53 gallon charred oak barrels

  • Four Grain Bottled in Bond Bourbon

    Four Grain Bottled in Bond Bourbon

    This special offering of our Four Grain is the first bonded bourbon in Colorado history. True to the Bottled in Bond Act of 1897, this bourbon is at least 4 years old, a product of a single season and a single distiller, and has been aged entirely in our federally bonded rickhouse

    AROMAS:

    Sweet and floral on the nose aromas of orange blossom, toffee, and apricot jam

    FLAVORS:

    Black tea, orange, brown butter, and dates on the palate. Notes of sandalwood round out a dry and lingering finish.

    MASH BILL:

    60% corn, 20% heirloom wheat, 10% heirloom rye, 10% heirloom malted barley

    8+ years in new 53 gallon charred oak barrels

    Four Grain Straight Cask Bourbon

    FOUR GRAIN STRAIGHT BOURBON WHISKEY – Cask

    With our fellow whiskey hunters in mind, we select and marry together a number of Four Grain Bourbon barrels to be bottled at Cask Strength due to the noteworthy character and concentrated flavors that come forward at high proof.

    AROMAS:

    Baking spice, black tea, and honeysuckle 

    FLAVORS:

    Bold notes of orange, clove and dried fruit 

    MASH BILL:

    60% corn, 20% heirloom wheat, 10% heirloom rye, 10% heirloom malted barley 

    AGED:

    3+ years in new, 53-gallon oak barrels and bottled at cask strength

There are No Shortcuts to Laws.

We always have and always will distill every drop we bottle. While it aged, we didn’t sell any whiskey for our first three years. Time is as critical ingredient as our heirloom grains. Every mash bill gets its own optimal distillation process, and we deploy time-intensive sour mash fermentation. We are the first Colorado distiller to bottle bonded whiskeys. For us, these steps are not extra, they’re mandatory to creating Laws Whiskey.

  • Old Fashioned

    The most popular whiskey cocktail featuring our bold and complex Four Grain Bourbon

    Ingredients

    • 2 oz Four Grain Straight Bourbon
    • 1 teaspoon sugar
    • 3 dashes Angostura bitters
    • 1 teaspoon water
    • Garnish: orange twist


    Directions

    Add the sugar and bitters into a mixing glass, then add the water, and stir until the sugar is nearly dissolved.
    Fill the mixing glass with ice, add the bourbon, and stir until well-chilled.
    Strain into a rocks glass over one large ice cube.
    Express the oil of an orange twist over the glass, then drop into the glass to garnish.

Rye

Our Rye is grown 8,000 feet above sea level. It’s safe to say we have high standards.

    7,400 feet above sea level, in Colorado’s San Luis Valley, the Cody family has been cultivating this low yield, semi-wild rye grain since the 1930s. We fell in love with how it ferments and distills into a terroir-driven, unapologetic whiskey. 

    AROMAS:

    Floral and perfumed on the nose with notes of baking spice and orange oil

    FLAVORS:

    Black tea, sweet mint, salted toffee, orange peel and stewed fig. Finishing with a radiant green peppercorn spice

    The first rye whiskey to be Bottled in Bond in Colorado history, it hails from San Luis Valley rye grains of a single season, shaped by us as the single distiller, then aged in our federally bonded rickhouse for at least four years. 

    AROMAS:

    Cherry cola, honey, and black currant

    FLAVORS:

    Hazelnut, mint, green mango, melon, and serrano pepper with a lingering finish of start anise and sage

    MASH BILL:

    95% heirloom rye, 5% heirloom barley

    In our pursuit of terroir-driven, unapologetic whiskey, we select and marry individual barrels at cask strength to fully express what originally drew us to the robust flavors of the semi-wild rye cultivated in the San Luis Valley.

    Bright flavors of mint, fresh grass, and tropical fruits

  • Manhattan

    A strong and sophisticated cocktail made with the bold pepper spice of our San Luis Valley Rye

    Ingredients

    • 2 oz San Luis Valley Straight Rye Whiskey
    • 1 oz sweet vermouth
    • 2 dashes Angostura bitters
    • Garnish: brandied cherry (or lemon twist, if preferred)


    Directions

    Add the rye whiskey, sweet vermouth, and bitters into a mixing glass with ice and stir until well-chilled.
    Strain into a chilled Nick & Nora or coupe glass.


    Garnish with a brandied cherry (or a lemon twist, if preferred).

    ORIGINS SERIES – CORNERSTONE

    This special and inaugural marriage of Laws San Luis Valley Rye is comprised of just nine barrels ranging in age from five to ten years old and barreled at full proof, the same proof the spirit went into the barrel for aging. These nine barrels consist of two rye mash bills: one being 95% heirloom San Luis Valley Rye and 5% heirloom barley, and the other is 100% heirloom San Luis Valley Rye. In this marriage, every barrel contributes toward creating a harmony of flavor with the younger barrels bringing brighter grain and fruit notes complemented by the older barrels’ richer character and flavors.

    AROMAS:

    Cinnamon pastry, golden raisin, and rose water

    FLAVORS:

    Green melon, mango, papaya, and sweet tobacco leaf. The finish is layered and medium to full-bodied with a briny, earthy, bright, and lingering finish

    MASH BILL:

    A marriage of 95% heirloom San Luis Valley Rye and 5% heirloom barley barrels, and 100% heirloom San Luis Valley Rye barrels

    Composed of a range of barrels from 5 to 10 years old

  • Laws Whiskey House Rackhouse Series

    Rackhouse Series #1 – Bourbon and Rye

    A Blend of Straight Bourbon and Rye Whiskeys Cask

    Much of whiskey’s magic comes from the rackhouse. The Rackhouse Series is about exploring our collection of barrels and the effect of different marriages and finishes. To create this first in the series, we started with a small batch composed of 60% Four Grain Straight Bourbon and 40% San Luis Valley Rye. We then filled four separate and unique barrels with this small batch. Barrel 1, our finishing vessel over the summer of 2023, is a second use San Luis Valley Rye cask. The resulting whiskey is characteristically bold, bringing forward notes of black tea, citrus, and radiant peppercorn.

    AROMAS:

    Orange blossom, baking spice, and botanicals

    FLAVORS:

    Characteristically bold, bringing forward notes of sweet tobacco, lemon, strawberry, green apple and cola.

    MASH BILL:

    A Marriage of Four Grain Bourbon and San Luis Valley Rye aged in San Luis Valley Rye casks.

    Composed from barrels aged 3.5 – 4 years old

  • Laws Whiskey House Bourbon Whiskey Finished in Cognac Foeder

    Straight Bourbon Finished in Cognac Foeder

    Four Grain Cognac Cask Finished Bourbon

    This limited release starts with our Four Grain Straight Bourbon. We migrate this bourbon to various-sized French oak casks, adding flavors from the wood and spirit previously held in these vessels. After secondary maturation, this whiskey is married in a 50-year-old, 1,600 gallon former Cognac foeder for tertiary finishing. Every year we harvest just a portion of the whiskey, immediately topping up the foeder with new Four Grain Bourbon finished in Cognac Casks. This solera-style cycle creates a complex spirit with our signature Four Grain flavor followed by nuanced notes of stewed fruit, raisin, and black tea with a luxurious finish.

    TASTING NOTES:

    Stewed fruit and black tea on the nose. Flavors of spiced apple butter, toasted wood, and raisin lead to a luxurious, rich finish.

    Straight Bourbon Whiskey finished in Honey Cask

    First, we made Four Grain Straight Bourbon. Then, an apiary filled two of those barrels with Colorado honey. After the honey was harvested, we filled them again with Four Grain Straight Bourbon. And now, it’s in a bottle just for you.

    Alpine meadow and citrus

    FLAVORS:

    Black tea and Rocky Mountain strawberries

    This whiskey derives it’s name from the grain its made from, Centennial Wheat. This heirloom spring soft white varietal is grown for us by the Cody family in the San Luis Valley. It is also the first Colorado-made wheat whiskey to meet the standards of the Bottled in Bond Act of 1897.

    AROMAS:

    Mountain strawberries, orange marmalade, alpine meadow and wildflower honey 

    FLAVORS:

    Jasmine tea, sage, spruce tips and pink peppercorn

    MASH BILL:

    100% Soft White Centennial Spring Wheat

    ORIGINS SERIES – INTENTION

    The 2022 ORIGINS Series Release INTENTION is about setting an ambition and achieving it. We sought to create a whiskey with intricacy and balance by marrying barrels of different ages. INTENTION is our first vertical marriage of Four Grain Straight Bourbon, bringing together whiskey ranging from three to ten years old at cask strength. Younger and older barrels create harmony with our signature grain character and rich barrel notes. We hope you enjoy the thrill of seeing this plan come together with INTENTION, the first of an annual ORIGINS Series tradition.

    Ripe cherries, peaches, orange blossom, honey, and corn pudding

    FLAVORS:

    Green melon, buttery pastry, sweet cinnamon, and black tea with medium body and a bright, lingering finish

    Straight Bourbon Whiskey finished in Calvados Cask

    Calvados is a category of brandy named after its home region in Normandy, France. Unlike its French brandy counterparts, Cognac and Armagnac, which are both derived from grapes, Calvados is made from apples. You may not be able to always taste the grapes in Cognac, but the apples in Calvados are hard to miss. Aging our Four Grain Bourbon in used Calvados casks makes those golden apple notes shine brightly.

    Golden apple, autumn leaves, and orange blossom

    FLAVORS:

    Baking spice, clove oil, black tea, and fig with a dry finish

    Centennial White Wheat imparts subtle orange notes that we sought to further accentuate via secondary aging in used curaco French oak casks.

    Orange flower blossoms

    FLAVORS:

    Creamy orange and candied ginger flavors give way to dry leather, sarsaparilla, vanilla and cardamom.

    The barley in our malt whiskey was literally kept from extinction. While commercial farmers found it too low yield, Wayne Cody found its unstripped flavor too glorious to let go. Today, his sons, in a field alongside Henry Road, continue to grow and malt this barley for us.

    Apple blossom, honey and toasted oats

    FLAVORS:

    Green apple, sugar cookie, seagrass and sweet pipe tobacco

    The oldest of the French brandies, Armagnac is complex and rich. We chose to finish our Four Grain Bourbon in this cask to bring out the subtle notes of fruit and spice

    AROMAS:

    Fine leather, stewed stone fruit and an aged maduro cigar

    FLAVORS:

    Malted chocolate, brittle, and dark fruit. The finish is bright and citrusy with finely grained tannins. Balanced acidity leaves you salivating and waiting for your next sip

    MASH BILL:

    60% corn, 20% heirloom wheat, 10% heirloom rye, 10% heirloom malted barley

    AGED:

    5 years 9 months in new, 53 gallon charred oak barrels and finished in a 300 liter French oak Armagnac Cask

    ORIGINS X – Four Grain Bourbon

    ORIGINS X celebrates our 10th anniversary. It represents 10 years of distilling, maturing, and continually improving. It’s also our oldest whiskey released to date featuring barrels distilled during the earliest days of Laws Whiskey House in 2011. Most notably, Origins X represents what can happen when a group of people come together around a vision and an obsession. As the saying goes, “it takes a Village” and for our village “there are no shortcuts.” Only 804 bottles in total.

    TASTING NOTES:

    Dried roses, golden apple, and beeswax on the nose. Flavors of raspberries, brown butter, and eucalyptus, leading to a pleasant grapefruit oil and brine-like finish.

    MASH BILL:

    60% corn, 20% heirloom wheat, 10% heirloom rye, 10% heirloom malted barley

    AGED:
