From coastal waters to Colorado grain, this guided experience explores how place influences flavor—pairing the concept of an oyster’s merroir with a whiskey’s terroir. The evening begins with a welcome cocktail and a freshly shucked oyster, followed by a guided pairing in our second-story cocktail lounge featuring Laws Four Grain Bourbon and Laws San Luis Valley Rye.

This special Whiskey Wednesday is hosted in collaboration with Martha Boff, founder of Oyster Bae, whose mission is to bring high-quality, sustainably sourced oysters and seafood to Colorado. With a background in seafood hospitality and nutrition, Martha brings a thoughtful, approachable perspective to pairing, flavor, and sustainability—creating a true coastal-meets-Colorado experience.
